Allergen cross contact and food hygiene failure
Safety Before 20 After 8Shared fryers, utensils, stock preparation or unlabeled specialty sauces let an allergen or pathogen reach a guest's plate, or chilled items are held above safe temperatures during busy service.
Who or what is affected: Guests with allergies, kitchen staff and the public
Causes
Shared equipment, sauces made in batches with varying ingredients, and staff turnover during peak periods.
Consequences
Severe allergic reaction, illness, closure order and loss of guest trust.
Existing controls
- Allergen matrix is printed for each dish and checked by the head chef.
- Probes check fridge and hot holding temperatures twice each service.
Control gaps
Recipe changes from specialty suppliers are not always updated on the allergen matrix.
Additional controls
- Prevent: Use color coded boards and separate tools for top allergen dishes during every service.
- Detect: Run a pre service check of labels, sauces and temperature logs and record any exceptions.
