This assessment shows how a banquet and event catering team can find, rate and control the risks that matter most to guests, staff and the business during functions. Eight risks were chosen because they are plausible in everyday catering work, from food safety and allergens to fire, fatigue, payments, supply and privacy. Food temperature failure and allergen errors score highest before controls because guest harm is serious and the work is fast. Each risk is scored before controls and again after existing and added controls. Most risks fall to Medium or Low once added controls are in place, but allergen and temperature exposure stay at Medium because the impact remains severe. The first actions are a written holding timeline, an allergy check at the pass, a venue fire walk and a rota cap for casual staff. The business is a teaching example, so every score illustrates method, not a real organization.
Scope
This assessment covers a banquet and event catering team that plans and delivers seated meals, receptions and off-site functions. It looks at risks to guests, staff, food safety, venues, cash, bookings and reputation, from enquiry and contract through setup, service, breakdown and invoicing. It does not cover venue ownership, liquor licensing details or the legal position of any real business. Jurisdiction, venue types, size and booking systems are assumptions made for teaching.
Context
The team has an events manager, a head chef, a banquet supervisor, a small pool of casual service staff and kitchen porters, and an admin officer who handles bookings and invoices. Functions take place in hotel ballrooms, marquees and client premises, often with portable cooking equipment and hired furniture. Bookings and payments are taken through an online booking tool and a card terminal. Each risk is scored before controls to show its natural level, then again after existing controls and the additional controls that should be added.
Objectives, assets and stakeholders
The objective is to deliver safe, accurate and well presented functions, protect guests and staff, keep accurate cash and booking records, meet food safety and privacy duties, and protect the reputation of the business. The assets in scope are food and drink stock, kitchen and portable equipment, guest and client data, cash and card takings, the booking system and the team's reputation. Stakeholders include guests, clients, casual and permanent staff, venue owners, suppliers, regulators and the owner. Clear roles matter: every risk has one owner role, and the events manager keeps the register current and reports to the owner each quarter.
